How do you learn to play the piano by ear?

Well, that's an interesting question. I begin by teaching a few mechanics about the piano as an instrument such as white and black note names (sharps and flats - you have to know those in order to learn the names of the black notes). Then I teach a few easy scales (C scale, F scale, G scale). Major chords are next for C major chord, F major chord, and G major chord. I also throw in a couple of simple rules that will apply to the rest of your learning to play the piano by ear. Then - you're ready for a song!!! The next part is usually the toughest part. We begin training the ear to "hear" the melody and "hear" the proper chord changes. For some, that doesn't take long while it may take longer for others.
